Ingredients

8 cups of salad greens , 2 cup fresh blue berries, ¼ cup toasted walnuts or you can use pecans as well ) and these needs to be chopped, ½ cup f crumbled Gorgonzola or you can use blue cheese as well, bottled vinaigrette.

Directions

Toss in a bowl the greens, the blueberries, walnuts and the cheese. After tossing them well, drizzle it with the vinaigrette as per taste, just gently coating the salad.

Fresh English Pea Salad with Mint and Pecorino

Ingredients

2 cups water, 1 cup shelled green peas, 6 cups trimmed arugula, ½ teaspoon salt, 1 tablespoon extra virgin olive oil, ¼ cup chopped mint, 1½ tablespoon fresh lemon juice, ¼ teaspoon freshly ground black pepper, ½ cup shaved pecorino Romano cheese.

Direction

Boil the 2 cup water in a pan and cook the peas in it for about 1 minute. Drain them and plunge in ice water. Then drain again. Now mix the peas, mint, arugula, lemon juice, olive oil, salt and black pepper in a bowl. Toss it well. After it all, sprinkle the shaved cheese immediately before serving.

Cucumber and Herb Salad with Pine nuts

Ingredients

1 tablespoon lemon rind strips, 1 tablespoon extra virgin olive oil, ½ teaspoon kosher salt, 2 tablespoons fresh lemon juice, ¼ cup chopped (coarsely) celery leaves, ¼ cup coarsely chopped flat-leaf parsley leaves, ¼ teaspoon freshly grounded black pepper, 4 thinly sliced green onions, 3 cups chopped (or sliced) cucumbers, 2 tablespoons toasted pine nuts.

Directions

Combine the rind stripes, olive oil, lemon juice, salt and black pepper in a bowl and whisk it all well. Then add all the veggies and leaves to the mix and toss gently. After tossing all of the ingredients, sprinkle the top of the mixture with the toasted pine nuts. Now serve with additional drinks or breads as suited to the individual.
